How can you tell whether yeast is still active?
Check the package date, storage history and yeast type, then use that manufacturer's activity test if freshness is uncertain. A rising foam shows activity; a few bubbles do not automatically meet the test's endpoint. Keep the quantities, temperature and timing from one method together. Testing yeast does not establish food safety or guarantee that a bread dough will rise correctly.
The jar at the back of the fridge deserves a clearer answer than “it smells like yeast.” This guide concerns commercial baker's yeast, with a measured dry-yeast test and separate directions for instant and fresh products. It is a source-based guide, not a report of our own kitchen trial.
What does the foam actually show?
Yeast is a living fungus. With suitable moisture, temperature and food, it ferments sugars and releases carbon dioxide, as Fleischmann's yeast introduction explains. The visible foam is evidence of activity under those conditions.
Excessive heat can kill yeast. Measure the water temperature specified for the actual method instead of assuming hotter water will produce a better result.
That is a narrower question than whether a loaf will succeed. Bread also needs a structure that retains gas, appropriate handling and a complete baking method. Our explanation of why bread dough rises separates gas production from gas retention.
Do the check before committing the rest of the ingredients. A failed sample is easier to interpret than a bowl containing flour, salt, milk and several undocumented substitutions.
How do you perform a measured dry-yeast test?
Here is Red Star's dry-yeast activity method, retaining its quantities and endpoint:
- Use a one-cup liquid measuring cup. Dissolve 1 teaspoon granulated sugar in 1/2 cup water at 110–115°F.
- Stir in one 7g packet, or 2 1/4 teaspoons, of dry yeast until no dry granules remain on top.
- Check after ten minutes. The foam should reach the one-cup mark with a rounded top.
- If it meets that endpoint, use immediately; deduct the test's 1/2 cup water from the recipe's liquid. If it falls short, discard that yeast.
Use a thermometer to measure the water. Do not substitute a wide bowl when judging a marked-cup endpoint. The measurement refers to the foamy mixture's level, not to an instruction to add water until the cup is full.
Before starting, check that the recipe can accommodate this yeast quantity and water allowance. If it cannot, select the manufacturer's method appropriate to that recipe or use a fresh package as directed. Do not quietly change a milk-based formula into a water-based one just to absorb a test mixture.
How should you interpret an uncertain result?
Separate a test that was followed accurately from one with missing information.

Our editorial rule is to keep an observation and a conclusion on separate lines. “A thin patch of foam” describes what you saw. “Good enough for this loaf” is an additional claim that the observation alone does not establish.
Do not keep adding sugar, warming the same sample and restarting the clock until something happens. That produces a different procedure without a clear comparison. For a time-sensitive bake, replacing uncertain yeast is the simpler decision.
Do active dry, instant and fresh yeast use the same test?
They should not be treated as one interchangeable product. King Arthur's freshness demonstration shows both active dry and SAF Red instant yeast bubbling in sweetened water. It uses its own quantities and observation sequence. That demonstrates why an instant yeast can show activity in liquid; it does not make every instant product's recipe instructions identical.
For example, Fleischmann's FAQ says dissolving RapidRise Instant Yeast removes its fast-rising capability and requires two complete rises. Read the exact product name before applying a blooming step to a quick-rise recipe.
Red Star fresh cake yeast has a separate rehydration method using water around 90°F, with vigorous foaming expected in 5–10 minutes. Follow that product page for the complete method and recipe liquid adjustment; do not transfer the hotter dry-yeast test to it. Fresh yeast is perishable and needs refrigeration. Use its package date and storage directions as well as any activity check.

Why do age and storage matter?
Fleischmann's FAQ explains that potency decreases with age and that oxygen, heat and humidity reduce activity. It recommends storing opened yeast airtight in the refrigerator and using it within three to four months. Apply that guidance to its products; retain another manufacturer's instructions for another yeast.
Write the opening date on the container rather than trying to reconstruct it from the last loaf you remember. Keep the original label or a photograph showing the product and its directions. Those are practical recordkeeping suggestions, not a promise to extend shelf life.
What should you record for the next bake?
A compact note makes the check repeatable:
- Product and type, package date and opening date if known.
- Manufacturer's method used, including ingredient quantities.
- Measured water temperature, container and start time.
- Observed endpoint and the decision you made.
Keep unknowns visible. “Opening date unknown” is more useful than a guessed month presented as fact. If a replacement package works and the older one does not under the same documented method, retain both observations without inventing a precise explanation for how the older yeast deteriorated.
What safety checks remain necessary?
Never taste raw flour, dough or batter to investigate a rise problem. The FDA's flour-safety guidance calls for cooking as directed, keeping raw ingredients separate from ready-to-eat foods, and washing hands, utensils and work surfaces after handling flour or dough. A successful activity check does not replace those steps.
